4 pork chops or chicken chops
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1 cup heavy cream
2 tablespoons Dijon mustard
1/2 cup chicken broth
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
Salt, to taste
Black pepper, to taste
Instructions
Season the chops with salt and black pepper on both sides.
Heat olive oil in a large skillet over medium-high heat and cook the chops for 4 to 5 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, melt the butter and add minced garlic, cooking for about 1 minute until fragrant.
Pour in the chicken broth and scrape up any browned bits from the pan.
Reduce heat to low and stir in heavy cream and Dijon mustard, mixing until smooth. Let simmer until slightly thickened.
Add thyme and adjust seasoning with salt and black pepper.
Return the chops to the skillet and spoon sauce over them. Simmer for a few minutes to combine flavors.
Serve warm with your choice of sides.

Use chicken breasts or thighs instead of pork chops if preferred.
