Ingredients
- 3 cups rotisserie chicken, shredded
- 2 cups frozen mixed vegetables (thawed)
- 2 cups minute rice (uncooked)
- 2 cans (10.5 oz each) cream of chicken soup
- 1 ½ cups milk (2% or whole)
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp ground pepper
- 2 cups Colby Jack cheese, shredded (divided)
- 2 tbsp fresh chopped parsley (for garnish)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Shred the rotisserie chicken and set aside. Rinse frozen vegetables under warm water to thaw.
- In a large mixing bowl, combine the chicken, vegetables, minute rice, cream of chicken soup, milk, garlic, onion powder, Italian seasoning, salt, and pepper. Mix well.
- Fold in 1 ½ cups of shredded cheese.
- Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the remaining ½ cup of cheese on top.
- Bake uncovered for 30-35 minutes, or until the rice is tender and the cheese is melted and bubbly.
- Remove from oven, garnish with fresh parsley, and serve warm.
