Ingredients

  • Romaine lettuce, chopped
  • Parmesan cheese, shaved or grated
  • Mayonnaise
  • Lemon juice
  • Dijon mustard
  • Garlic, minced
  • Anchovy paste (optional)

  • Salt
  • Black pepper
  • Panko breadcrumbs

Instructions

  1. In a skillet over medium heat, melt butter or heat olive oil and toast panko with minced garlic and salt until golden and crispy. Set aside to cool.
  2. In a bowl, whisk together mayonnaise, lemon juice, Dijon mustard, garlic, anchovy paste (if using), olive oil, salt, and black pepper until smooth.
  3. Place chopped romaine in a large bowl and toss with dressing until evenly coated.
  4. Transfer to a serving dish and top with parmesan cheese.
  5. Sprinkle garlic panko over the top just before serving.
  6. Serve immediately.
