Ingredients
1½ pounds sirloin steak or beef stew meat, thinly sliced
2 tablespoons olive oil
2 tablespoons unsalted butter
1 medium onion, diced
16 ounces cremini or baby bella mushrooms, sliced
3 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
1 teaspoon salt
½ teaspoon black pepper
1 cup sour cream
12 ounces egg noodles, cooked
Fresh parsley, chopped
Instructions
Cook the egg noodles according to package directions and set aside.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the beef in batches and sear until browned on all sides.
Transfer the beef to a plate.
Add the remaining olive oil and butter to the skillet.
Add the onion and cook for 4–5 minutes until softened.
Stir in the mushrooms and cook for 7–8 minutes until browned and tender.
Add the garlic and cook for 30 seconds until fragrant.
Sprinkle the flour over the vegetables and stir for 1 minute.
Gradually pour in the beef broth while stirring constantly.
Add the Worcestershire sauce, Dijon mustard, salt, and black pepper.
Return the beef to the skillet.
Reduce the heat and simmer for 15–20 minutes until the beef is tender and the sauce thickens.
Remove the skillet from the heat.
Stir in the sour cream until smooth and fully incorporated.
Serve the stroganoff over cooked egg noodles.
Garnish with fresh parsley before serving.

Add the sour cream after removing the pan from the heat to prevent curdling.
Cremini, baby bella, shiitake, or mixed mushrooms all work well.
Ground beef can be substituted for a quicker, budget-friendly version.
