Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 2 tablespoons sugar
  • 16 oz cream cheese, softened
  • 2 ripe bananas, mashed
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

  • Optional: caramel sauce
  • Optional: crushed vanilla wafers
  • Optional: chopped nuts

Instructions

  1. Preheat the oven to 325°F and line a baking pan with parchment paper.
  2. In a bowl, combine the graham cracker crumbs, melted butter, and sugar.
  3. Press the crust mixture evenly into the bottom of the prepared pan.
  4. Bake the crust for 8 to 10 minutes, then let it cool slightly.
  5. In a large bowl, beat the cream cheese until smooth.
  6. Add the mashed bananas and sugar, mixing until fully combined.
  7. Beat in the eggs one at a time.
  8. Stir in the sour cream and vanilla extract until smooth.
  9. Pour the cheesecake filling evenly over the crust.
  10. Bake for 35 to 40 minutes, or until the center is mostly set.
  11. Allow the bars to cool completely before refrigerating for at least 2 hours.
  12. Slice into bars and add optional toppings before serving.
