Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 16 ounces fresh mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Melt the butter with the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, then stir in the minced garlic and cook for 30 seconds.
  3. Add the sliced mushrooms and cook until they release their moisture and become golden brown.
  4. Sprinkle the flour over the mushrooms and stir constantly for 1 minute.
  5. Gradually pour in the broth while stirring until the mixture is smooth.
  6. Add the fresh thyme and simmer for about 15 minutes.
  7. Stir in the heavy cream and cook for another 5 minutes.
  8. Blend part or all of the soup if a smoother consistency is desired.
  9. Season with salt and black pepper to taste.
  10. Garnish with chopped fresh parsley and serve warm.
