Ingredients
2–3 ripe bananas, mashed
1 ½ cups all-purpose flour
½ cup granulated sugar
¼ cup brown sugar
½ cup butter, melted
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
¼ teaspoon salt
8 oz cream cheese, softened
¼ cup sugar
1 large egg
½ teaspoon vanilla extract
Instructions
Preheat the oven to 180°C (350°F) and grease or line a loaf pan.
In a bowl, mix mashed bananas, melted butter, granulated sugar, and brown sugar until smooth.
Add eggs and vanilla extract, mixing well.
In another bowl, combine flour, baking soda, and salt.
Gradually mix dry ingredients into wet ingredients until just combined.
In a separate bowl, beat cream cheese, sugar, egg, and vanilla extract until smooth.
Pour half of the banana batter into the loaf pan.
Spread the cream cheese mixture evenly over the batter.
Top with the remaining banana batter and gently swirl if desired.
Bake for 50–60 minutes until a toothpick inserted into the bread (not cream cheese layer) comes out clean.
Allow to cool before slicing.
Notes
Use very ripe bananas for best sweetness and flavor.
Avoid overmixing to keep the bread tender.
Add nuts or chocolate chips for extra texture.
Store in the refrigerator for up to 5 days.
Freeze for up to 2 months and thaw before serving.
