Ingredients

  • 2 cups mixed nuts (almonds, pecans, cashews, walnuts, or peanuts)
  • 1 cup dried cranberries
  • 12 oz semi-sweet or dark chocolate chips
  • 2 oz white chocolate chips, melted (optional, for drizzling)
  • 1 tsp coconut oil or vegetable shortening (optional)
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Line a baking sheet or large plate with parchment paper.
  2. Roughly chop any large nuts to create a variety of textures.
  3. Combine the mixed nuts and dried cranberries in a large mixing bowl.
  4. Melt the semi-sweet or dark chocolate with the optional coconut oil until smooth using a microwave or double boiler.
  5. Pour the melted chocolate over the nut and cranberry mixture and stir until evenly coated.
  6. Scoop spoonfuls of the mixture onto the prepared baking sheet to form individual clusters.
  7. Drizzle with melted white chocolate if desired.
  8. Sprinkle lightly with flaky sea salt, if using.
  9. Let the clusters set at room temperature or refrigerate for 20 to 30 minutes until the chocolate is completely firm.
