Cranberry Chicken Salad Lettuce Rollup Sandwiches are a fresh and flavorful low-carb meal featuring tender chicken, sweet dried cranberries, crunchy celery, and a creamy dressing wrapped in crisp lettuce leaves. Perfect for lunch, meal prep, or a light dinner.

Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 1/2 cup dried cranberries
  • 2 celery stalks, finely diced
  • 1/4 cup red onion, finely diced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large romaine, butter lettuce, or iceberg lettuce leaves
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1 small apple, finely diced (optional)
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. In a large mixing bowl, combine the cooked chicken, dried cranberries, celery, and red onion.
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  3. Pour the dressing over the chicken mixture and stir until evenly coated.
  4. Fold in the optional pecans, walnuts, apple, or parsley if using.
  5. Wash and thoroughly dry the lettuce leaves.
  6. Spoon a generous amount of chicken salad onto the center of each lettuce leaf.
  7. Fold the sides inward and roll up tightly like a wrap.
  8. Serve immediately or refrigerate until ready to enjoy.
