Instructions
In a large bowl, combine the buttermilk, hot sauce if using, salt, and black pepper.

In a separate bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, smoked paprika, thyme, oregano, baking powder, salt, black pepper, and cayenne pepper if using.

Let the coated chicken rest on a wire rack for 10–15 minutes.
Heat 2–3 inches of oil in a heavy Dutch oven or deep skillet to 325°F (163°C).

Cook for 12–18 minutes, turning occasionally, until golden brown and the internal temperature reaches 165°F (74°C).
Transfer the chicken to a wire rack to drain and rest for 5 minutes before serving.
