Ingredients

  • 4 cups fresh corn kernels (or frozen corn)
  • 3 tbsp butter
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 1/3 cup heavy cream or half-and-half
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika (optional)
  • 1/2 tsp salt, or to taste
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme leaves (optional)
  • 2 tbsp chopped fresh parsley
  • 2 sliced green onions

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the onion, celery, and bell peppers, then sauté until tender, about 5 to 7 minutes.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the corn kernels and cook for 5 to 7 minutes until tender and lightly caramelized.
  5. Season with the Cajun seasoning, smoked paprika, salt, and black pepper.
  6. Pour in the heavy cream and stir until everything is evenly coated.
  7. Simmer for 2 to 3 minutes until the mixture thickens slightly.
  8. Stir in the fresh thyme, parsley, and sliced green onions.
  9. Serve warm as a flavorful side dish.
