Cookie Cheesecake Bars combine creamy cheesecake with a crunchy cookie crust, creating the perfect fusion of two favorite desserts. With a buttery cookie crust and rich, smooth filling, these bars are ideal for any gathering, easy to make, and endlessly customizable.

Ingredients

  1. For the crust:
    1 1/2 cups cookie crumbs (chocolate chip cookies, Oreos, or graham crackers)
    1/4 cup granulated sugar
    1/2 cup unsalted butter, melted
    For the cheesecake filling:
    16 oz cream cheese, softened
    1 cup granulated sugar
    1 teaspoon vanilla extract
    2 large eggs
    1/2 cup sour cream
    1/4 cup heavy cream
    1 tablespoon all-purpose flour
    Pinch of salt
    For the topping (optional):
    Whipped cream
    Chocolate chips or crushed cookies for garnish
    Chocolate sauce, caramel, or fruit topping (optional)

Instructions

Prepare the crust: Preheat the oven to 325°F (163°C). Grease and line a 9×9-inch square pan with parchment paper. In a medium bowl, combine cookie crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for 8-10 minutes. Let cool.

  1. Prepare the filling: Beat cream cheese with sugar and vanilla until smooth. Add eggs one at a time, then stir in sour cream, heavy cream, flour, and salt. Pour filling over cooled crust and smooth the top.
  2. Bake: Bake for 30-35 minutes until the center is just set but still slightly jiggly. Let cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
  3. Top and serve: Top with whipped cream, chocolate chips, crushed cookies, or a drizzle of chocolate sauce. Slice into squares and serve chilled.

Notes

  • For a chocolate twist, use an Oreo or chocolate chip cookie crust.
  • Bars should be chilled for at least 4 hours or overnight for the best texture.
  • Freezes well for up to 2 months. Thaw before serving.
