Coffee Cake is a soft, buttery cake layered and topped with a sweet cinnamon streusel for the perfect balance of tender crumb and crunchy topping. This classic cake is ideal for breakfast, brunch, or enjoying with a hot cup of coffee or tea.

Ingredients

  • All-purpose flour
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter, softened
  • Granulated sugar

  • Sour cream
  • Vanilla extract

  • Brown sugar
  • Ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch square baking pan.
  2. Prepare the streusel by combining the flour, brown sugar, cinnamon, and butter until crumbly.
  3. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  4. Cream the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, then mix in the vanilla extract and sour cream.
  6. Gradually fold the dry ingredients into the wet ingredients until just combined.
  7. Spread half of the batter into the prepared pan and sprinkle with half of the streusel.
  8. Spread the remaining batter over the streusel and top with the remaining streusel mixture.
  9. Bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool for about 15 minutes before drizzling with the optional vanilla glaze.
  11. Slice and serve warm or at room temperature.
