Ingredients

  • 2 cups full-fat coconut milk
  • 2 teaspoons matcha powder
  • 1/4 cup granulated sugar or maple syrup
  • 3 tablespoons cornstarch or arrowroot starch
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Toasted coconut flakes (optional)
  • Fresh strawberries (optional)
  • Fresh raspberries (optional)
  • Kiwi slices (optional)
  • Mango cubes (optional)
  • Chia seeds (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Whisk together the coconut milk, matcha powder, sweetener, cornstarch, vanilla extract, and salt in a saucepan until smooth.
  2. Place the saucepan over medium heat and cook, stirring constantly.
  3. Continue cooking until the pudding thickens and becomes smooth and creamy.
  4. Remove the saucepan from the heat and let the pudding cool for a few minutes.
  5. Divide the pudding evenly among serving glasses or bowls.
  6. Cover and refrigerate for at least 2 hours until fully chilled and set.
  7. Top with toasted coconut flakes, fresh fruit, chia seeds, or mint leaves before serving if desired.

Notes

  • Full-fat coconut milk creates the creamiest texture.
  • Culinary-grade matcha provides vibrant color and balanced flavor.
  • Stir in a splash of coconut milk before serving if the pudding thickens during storage.
  • Store covered in the refrigerator for up to 4 days.
  • Do not freeze, as the texture may become grainy after thawing.
