Coconut Chicken Rice Bowls are a comforting and flavorful meal made with tender chicken, fluffy rice, and a creamy coconut-infused sauce. Packed with savory, slightly sweet flavors and fresh toppings, this easy bowl recipe is perfect for weeknight dinners or meal prep.

Ingredients

  • 1 pound boneless skinless chicken breasts or thighs, diced
  • 2 cups cooked jasmine rice
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup steamed broccoli or mixed vegetables
  • Chopped cilantro for garnish
  • Lime wedges for serving
  • Toasted sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced chicken and season with salt and black pepper. Cook until browned and fully cooked through.
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, sauté the onion until softened. Add the garlic and ginger and cook for another minute.
  5. Pour in the coconut milk, soy sauce, and lime juice. Stir well and let the sauce simmer for 3 to 5 minutes until slightly thickened.
  6. Return the cooked chicken to the skillet and toss to coat in the coconut sauce.
  7. Divide the cooked rice among serving bowls.
  8. Top the rice with coconut chicken and steamed vegetables.
  9. Garnish with chopped cilantro, sesame seeds, and lime wedges before serving.
