Ingredients

  • Shredded coconut
  • Sweetened condensed milk or coconut milk
  • Vanilla extract
  • Salt
  • Dark or milk chocolate
  • Chopped pistachios

Instructions

  1. In a bowl, mix shredded coconut, sweetened condensed milk or coconut milk, vanilla extract, and a pinch of salt until sticky.
  2. Shape the mixture into small bite-sized balls or ovals.
  3. Place on a lined tray and refrigerate for 20–30 minutes to firm up.
  4. Melt chocolate using a microwave or double boiler, stirring until smooth.
  5. Dip or drizzle each coconut bite with melted chocolate.
  6. Sprinkle chopped pistachios on top before the chocolate sets.
  7. Refrigerate again for 15–20 minutes until chocolate is firm.
  8. Serve chilled or at room temperature.
