A warm, comforting cobbler filled with juicy fruit and topped with tender, flaky cream cheese biscuits that bake to golden perfection.

Ingredients

  • 4 cups fresh or frozen fruit (berries, peaches, apples, or mix)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon (optional)
  • 1/4 tsp salt
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 4 oz cream cheese, cold and cubed
  • 3/4 cup milk or buttermilk
  • 2 tbsp coarse sugar for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, mix fruit, granulated sugar, brown sugar, lemon juice, cornstarch, vanilla, cinnamon if using, and salt. Transfer to the baking dish.
  3. In another bowl, whisk flour, sugar, baking powder, and salt.
  4. Cut in butter and cream cheese until the mixture resembles coarse crumbs.
  5. Add milk or buttermilk and mix gently until a dough forms.
  6. Turn dough onto a floured surface, pat into a rectangle, and fold over itself a few times to create layers.
  7. Pat out again and cut into biscuit portions.
  8. Arrange biscuits over the fruit filling with space between them.
  9. Sprinkle tops with coarse sugar.
  10. Bake for 35-40 minutes until fruit is bubbling and biscuits are golden brown.
  11. Let cool slightly before serving.

Notes

  • Frozen fruit can be used without thawing.
  • Do not overmix the dough to keep biscuits tender.
  • Add citrus zest for extra brightness.
  • Best served warm with ice cream or whipped cream.
  • Store leftovers in the refrigerator for up to 3 days.
  • Reheat in the oven to maintain texture.
