Classic Potato Rolls are soft, fluffy, and buttery homemade rolls made with mashed potatoes for an extra tender texture and rich flavor. They’re perfect for holiday dinners, family meals, sandwiches, or served warm with butter.

Ingredients

  • Mashed potatoes
  • All-purpose flour or bread flour
  • Active dry yeast or instant yeast
  • Warm milk
  • Granulated sugar
  • Unsalted butter, softened
  • Egg
  • Salt
  • Warm water (if needed)
  • Melted butter, for brushing

Instructions

  1. In a large mixing bowl, combine the warm milk, yeast, and sugar. Let stand for 5–10 minutes until foamy if using active dry yeast.
  2. Add the mashed potatoes, softened butter, egg, and salt, then mix until well combined.
  3. Gradually add the flour until a soft dough forms.
  4. Knead the dough for 8–10 minutes until smooth and elastic, adding a little more flour if needed.
  5. Place the dough in a lightly greased bowl, cover, and let rise in a warm place for 1 to 1½ hours, or until doubled in size.
  6. Punch down the dough and divide it into 12–16 equal portions.
  7. Shape each portion into a smooth ball and place in a greased baking dish or on a parchment-lined baking sheet.
  8. Cover and let the rolls rise for 30–45 minutes until puffy.
  9. Preheat the oven to 375°F (190°C).
  10. Bake for 18–22 minutes until the tops are golden brown.
  11. Brush the warm rolls with melted butter and serve warm or cool completely before storing.

Notes

  • Plain leftover mashed potatoes work best.
  • Bread flour creates a slightly chewier texture, while all-purpose flour yields softer rolls.
  • Refrigerate the dough after the first rise for overnight preparation if desired.
  • Freeze cooled rolls for up to 3 months and reheat before serving.
  • These rolls are excellent for sandwiches and sliders.
