Citrus Pavlova is a light and elegant dessert featuring a crisp meringue shell with a soft marshmallow-like center, topped with fluffy whipped cream and vibrant citrus fruits. The sweet and tangy flavors create a refreshing dessert perfect for celebrations and special gatherings.

Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 orange, peeled and sliced
  • 1 grapefruit, peeled and segmented
  • 1 mandarin or tangerine, peeled
  • Lemon zest for garnish
  • Fresh mint leaves (optional)

Instructions

  1. Preheat the oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. In a clean mixing bowl, beat the egg whites and salt until soft peaks form.
  3. Gradually add the sugar, one tablespoon at a time, beating continuously until stiff glossy peaks form.
  4. Gently fold in the cornstarch, vinegar, and vanilla extract.
  5. Spoon the meringue onto the prepared baking sheet, shaping it into a round with slightly raised edges.
  6. Bake for 1 hour and 15 minutes.
  7. Turn off the oven and allow the pavlova to cool completely inside the oven with the door slightly open.
  8. In a separate bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  9. Spread the whipped cream over the cooled pavlova.
  10. Arrange the citrus fruits decoratively on top.
  11. Garnish with lemon zest and mint leaves if desired.
  12. Serve immediately for the best texture.
