Cilantro Lime Dressing is a fresh, creamy dressing with bright citrus, savory garlic, and a subtle touch of sweetness. It is perfect for salads, tacos, burrito bowls, grilled chicken, vegetables, and grain bowls.

Ingredients

  • 1 cup packed fresh cilantro
  • 1/2 cup plain Greek yogurt
  • 1/4 cup olive oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 garlic clove
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 13 tablespoons water, as needed

Instructions

  1. Rinse the cilantro thoroughly and pat it dry. Remove thick or tough stems, leaving tender stems if desired.
  2. Add the cilantro, Greek yogurt, olive oil, lime juice, lime zest, garlic, honey, cumin, salt, and black pepper to a blender or food processor.
  3. Blend until the cilantro is finely chopped and the dressing is smooth and creamy, stopping to scrape down the sides as needed.
  4. Add water 1 tablespoon at a time and blend until the desired consistency is reached. Use less water for a dip and more for a pourable dressing.
  5. Taste and adjust the seasoning, adding additional lime juice for acidity, honey for sweetness, or salt as needed.
  6. Serve immediately or transfer to an airtight container and refrigerate until ready to use.

Notes

  • For a spicy variation, blend in half of a seeded jalapeño or use a whole jalapeño for additional heat.
  • For an avocado variation, blend in half of a ripe avocado for a thicker, creamier consistency.
  • For a dairy-free version, substitute plain dairy-free yogurt or avocado for the Greek yogurt.
  • For an extra creamy dressing, replace some of the Greek yogurt with mayonnaise or sour cream.
  • For a vinaigrette-style version, omit the yogurt, increase the olive oil, and blend until emulsified.
  • Store in an airtight container in the refrigerator for 4–5 days. Stir or shake well before serving.
  • If the refrigerated dressing becomes too thick, whisk in a small amount of water or fresh lime juice.
  • Freezing is not recommended because the Greek yogurt may separate after thawing.
