Cilantro Lime Chicken Pizza is a fresh Southwestern-inspired pizza topped with tender lime-marinated chicken, melted mozzarella and Monterey Jack cheese, and vibrant cilantro. Bright citrus flavors and savory toppings make this pizza a delicious twist on a classic favorite.

Ingredients

  • 1 pound boneless, skinless chicken breast, diced
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound pizza dough
  • 1 tablespoon olive oil
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded Monterey Jack cheese
  • ¼ red onion, thinly sliced
  • 1 small jalapeño, thinly sliced (optional)
  • ½ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 475°F (245°C).
  2. In a bowl, combine the chicken, olive oil, lime juice, chili powder, garlic powder, cumin, salt, and black pepper.
  3. Let the chicken marinate for 15–20 minutes.
  4. Heat a skillet over medium-high heat and cook the chicken for 5–7 minutes until fully cooked.
  5. Remove the chicken from the heat and set aside.
  6. Stretch or roll the pizza dough into a 12- to 14-inch round.
  7. Place the dough on a pizza pan or pizza peel.
  8. Brush the dough lightly with olive oil.
  9. Sprinkle the mozzarella and Monterey Jack cheeses evenly over the crust.
  10. Distribute the cooked chicken over the cheese.
  11. Add the sliced red onion and jalapeño if using.
  12. Bake for 12–15 minutes, or until the crust is golden and the cheese is bubbly.
  13. Remove from the oven and immediately sprinkle the chopped cilantro over the pizza.
  14. Squeeze fresh lime juice over the top.
  15. Slice and serve with lime wedges.

Notes

  • Fresh cilantro should be added after baking for the brightest flavor.
  • Rotisserie chicken can be substituted for a quicker preparation.
  • Add avocado, corn, black beans, or green onions for extra Southwestern flair.
  • For more heat, add extra jalapeños or a drizzle of hot sauce.
