Ingredients
water
unsalted butter
salt
granulated sugar
all-purpose flour
eggs
pearl sugar
Instructions
Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a saucepan, heat water, butter, salt, and sugar until boiling and butter is melted.
Remove from heat and stir in flour all at once until a smooth dough forms.
Return to low heat and cook, stirring, until dough pulls away and forms a ball.
Transfer dough to a bowl and let cool slightly.
Add eggs one at a time, mixing until smooth and glossy.
Pipe small mounds onto the baking sheet.
Sprinkle generously with pearl sugar.
Bake for 20–25 minutes until puffed and golden. Do not open oven during baking.
