Decadent chocolate truffles infused with bright raspberry flavor, featuring a smooth ganache center and a delicate coating. These elegant bites are rich, creamy, and perfect for gifting or special occasions.

Ingredients

  • 8 ounces dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1/3 cup raspberry purée
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1/4 cup cocoa powder or melted chocolate (for coating)
  • 2 tablespoons powdered sugar or crushed freeze-dried raspberries (optional)

Instructions

  1. Heat heavy cream in a saucepan until just simmering, then remove from heat.
  2. Pour hot cream over chopped chocolate and let sit for 1 minute.
  3. Stir until smooth to form a ganache.
  4. Mix in raspberry purée, butter, and vanilla extract until fully combined.
  5. Cover and refrigerate for 2–3 hours until firm.
  6. Scoop small portions and roll into balls using your hands.
  7. Roll in cocoa powder, powdered sugar, or crushed raspberries, or dip in melted chocolate.
  8. Chill briefly until set before serving.
