Ingredients

  • For the Chocolate Donuts:
  • 1 1/2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips (optional)
  • For the Raspberry Glaze:
  • 1 cup powdered sugar
  • 2 to 3 tablespoons raspberry puree
  • 1 teaspoon lemon juice
  • Fresh raspberries for garnish (optional)
  • Freeze-dried raspberry powder for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a donut pan.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, salt, and granulated sugar in a large bowl.
  3. In a separate bowl, whisk together the egg, milk, sour cream, vegetable oil, and vanilla extract until smooth.
  4. Stir the wet ingredients into the dry ingredients until just combined, then fold in the mini chocolate chips if using.
  5. Spoon or pipe the batter into the prepared donut pan, filling each cavity about three-quarters full.
  6. Bake for 10 to 12 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the donuts in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Whisk together the powdered sugar, raspberry puree, and lemon juice until smooth.
  9. Dip each cooled donut into the raspberry glaze and allow the excess to drip off.
  10. Garnish with fresh raspberries or freeze-dried raspberry powder if desired, then let the glaze set before serving.

Notes

  • Add 1 teaspoon espresso powder to enhance the chocolate flavor.
  • Substitute dark chocolate chips for a richer taste.
  • Drizzle with melted dark or white chocolate for an elegant finish.
  • Fold finely chopped fresh raspberries into the batter for extra fruit flavor.
  • Store glazed donuts in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze unglazed donuts for up to 3 months and prepare the glaze after thawing for the best results.
