Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup crushed peppermint candies or candy canes

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and peppermint extract.
  6. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  7. Fold in the chocolate chips and half of the crushed peppermint candies.
  8. Scoop tablespoon-sized portions of dough onto the prepared baking sheets.
  9. Sprinkle the remaining crushed peppermint candies on top of the cookies.
  10. Bake for 10–12 minutes or until the edges are set and the centers remain soft.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Chill the dough before baking if the cookies spread too much.
  • Use dark chocolate chunks for a richer chocolate flavor.
  • Add espresso powder for a peppermint mocha variation.
  • Store cookies in an airtight container for up to 5 days.
  • Freeze cookie dough or baked cookies for up to 2 months.
