Ingredients

  • 1 cup unsalted butter
  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup stout beer
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 2 cups fresh strawberries, sliced
  • 1 1/2 cups semi-sweet or dark chocolate chips
  • 2 tbsp heavy cream (optional)
  • 2 oz white chocolate, melted (optional, for decorating)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
  2. Melt the butter and chopped semi-sweet chocolate together until smooth, then whisk in the cocoa powder.
  3. Stir the stout beer into the chocolate mixture until fully incorporated.
  4. Mix in the granulated sugar and brown sugar.
  5. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  6. Fold in the flour and salt just until no dry streaks remain.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 30–35 minutes, or until the edges are set and a toothpick inserted near the center comes out with a few moist crumbs.
  9. Allow the brownies to cool completely in the pan.
  10. Arrange the sliced fresh strawberries evenly over the cooled brownies.
  11. Melt the chocolate chips with the heavy cream, if using, until smooth and glossy.
  12. Pour the melted chocolate over the strawberries and spread into an even layer.
  13. Drizzle with melted white chocolate if desired.
  14. Refrigerate until the chocolate topping is firm.
  15. Slice into squares with a sharp knife and serve chilled or at room temperature.
