Chocolate Almond Croissants are buttery and flaky pastries filled with creamy almond filling and rich melted chocolate. Inspired by classic French bakery treats, these croissants are perfect for breakfast, brunch, or an elegant dessert.

Ingredients

  • 4 large croissants
  • 1/2 cup semi-sweet chocolate chips or chopped chocolate
  • Sliced almonds for topping
  • Powdered sugar for garnish
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup almond flour
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup water
  • 2 tablespoons sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. If making the syrup, combine the water and sugar in a small saucepan and heat until the sugar dissolves. Let cool slightly.
  3. In a mixing bowl, beat the butter and sugar until creamy.
  4. Add the almond flour, egg, vanilla extract, and almond extract. Mix until smooth.
  5. Slice the croissants in half horizontally.
  6. Brush the inside lightly with the syrup if using.
  7. Spread a layer of almond filling inside each croissant.
  8. Add chocolate chips or chopped chocolate over the almond filling.
  9. Close the croissants and spread a little more almond filling on top.
  10. Sprinkle sliced almonds over the tops.
  11. Bake for 15–18 minutes or until golden brown and crisp.
  12. Let cool slightly before dusting with powdered sugar and serving.

Notes

  • Use dark chocolate for a richer and less sweet flavor.
  • Add orange zest to the almond filling for a citrus twist.
  • Store leftovers in an airtight container for up to 2 days at room temperature or 4 days refrigerated.
  • Reheat in the oven to maintain the flaky texture.
