Fresh and savory chive butter combines creamy butter with finely chopped chives for a versatile compound butter with delicate onion flavor. Melt it over potatoes, vegetables, steak, fish, eggs, or serve it with warm bread.

Ingredients

  • ½ cup (1 standard stick) unsalted butter, softened
  • Fresh chives, finely chopped
  • Fine sea salt
  • Freshly ground black pepper, optional
  • Fresh lemon zest, optional
  • Garlic, finely minced or grated, optional

Instructions

  1. Let the butter soften at room temperature until easy to mix but not melted.
  2. Rinse the fresh chives and dry them thoroughly. Finely chop them with a sharp knife.
  3. Place the softened butter in a bowl and add the chopped chives and salt. Add black pepper, lemon zest, or garlic if desired.
  4. Mix with a fork or spatula until the chives and seasonings are evenly distributed throughout the butter. Taste and adjust the seasoning as needed.
  5. Spoon the chive butter onto parchment paper or plastic wrap and shape it into a log. Roll tightly and secure the ends. Alternatively, transfer the butter directly to a small airtight container.
  6. Refrigerate for at least 1 hour, or until firm. Slice the chilled log into rounds as needed and serve with potatoes, vegetables, meat, fish, eggs, or bread.

Notes

  • Unsalted butter provides the most control over seasoning. If using salted butter, reduce or omit the additional salt until after tasting.
  • Dry the fresh chives thoroughly after washing to prevent excess moisture from affecting the butter’s texture.
  • For garlic chive butter, add finely grated or minced garlic.
  • For lemon chive butter, add fresh lemon zest for a bright flavor that pairs especially well with fish, seafood, and vegetables.
  • Chive blossom florets can be mixed into the butter with chopped chives for additional color and onion flavor.
  • Fresh parsley, dill, thyme, or finely grated Parmesan can also be added for variations.
  • Store tightly wrapped or in an airtight container in the refrigerator and use within approximately 1–2 weeks for best quality.
  • For longer storage, freeze well-wrapped portions for up to approximately 3 months.
