Chipotle Hummus Recipe

Creamy chipotle hummus combines chickpeas, tahini, fresh citrus, garlic, and smoky chipotle peppers for a savory dip with a spicy kick. Serve it with pita, vegetables, tortilla chips, or use it as a flavorful sandwich spread.

Ingredients

  • Cooked chickpeas, drained and rinsed
  • Tahini
  • Chipotle peppers in adobo sauce
  • Adobo sauce
  • Fresh lemon juice
  • Garlic cloves
  • Extra-virgin olive oil
  • Ground cumin
  • Fine sea salt
  • Cold water
  • Smoked paprika, optional
  • Fresh cilantro, optional for serving

Instructions

  1. Drain and rinse the chickpeas thoroughly. For especially smooth hummus, remove any loose chickpea skins if desired.
  2. Add the tahini and fresh lemon juice to a food processor and blend for 30–60 seconds to create a light, creamy base.
  3. Add the garlic, cumin, salt, chipotle pepper, and a little adobo sauce. Process until well combined, starting with a small amount of chipotle so the heat can be adjusted later.
  4. Add the chickpeas and process until the mixture becomes thick and creamy, stopping occasionally to scrape down the sides of the food processor.
  5. With the food processor running, gradually add cold water until the hummus reaches the desired creamy consistency. Drizzle in the olive oil and continue processing until smooth.
  6. Taste and adjust with additional salt, lemon juice, chipotle pepper, or adobo sauce as desired.
  7. Transfer the hummus to a serving bowl and create swirls on the surface with the back of a spoon. Finish with a drizzle of olive oil and, if desired, smoked paprika, chopped cilantro, or a small spoonful of adobo sauce.

Notes

  • For extra-spicy hummus, gradually blend in additional chipotle pepper and adobo sauce until the desired heat level is reached.
  • Replace raw garlic with roasted garlic for a sweeter, mellower garlic flavor.
  • Blend in roasted red peppers for extra sweetness, color, and a milder contrast to the smoky chipotle.
  • For avocado chipotle hummus, blend a ripe avocado into the finished hummus for additional creaminess.
  • Replace some or all of the lemon juice with fresh lime juice for a brighter, Mexican-inspired variation.
  • For extra-creamy hummus, blend the tahini and lemon juice first, use very cold water, process thoroughly, and remove loose chickpea skins when possible.
  • Store leftovers in an airtight container in the refrigerator and enjoy within 3–4 days for best quality.
  • If refrigerated hummus becomes too thick, stir in a teaspoon or two of cold water or olive oil.
  • Hummus can be frozen in a freezer-safe container. Thaw it in the refrigerator, stir thoroughly, and refresh the consistency with water or olive oil if needed.
