Chilli Con Carne is a hearty and comforting dish made with seasoned ground beef, beans, tomatoes, and warming spices simmered until rich and flavorful. It’s perfect for family dinners, meal prep, or serving with your favorite sides and toppings.

Ingredients

  • Ground beef
  • Onion, diced
  • Garlic, minced
  • Olive oil
  • Red bell pepper, diced
  • Tomato paste
  • Canned diced tomatoes
  • Tomato sauce
  • Kidney beans, drained and rinsed
  • Beef broth
  • Chili powder
  • Ground cumin
  • Smoked paprika
  • Dried oregano
  • Ground coriander (optional)
  • Cayenne pepper (optional)
  • Salt
  • Black pepper
  • Brown sugar (optional)
  • Worcestershire sauce
  • Fresh cilantro or parsley, for garnish
  • Sour cream, shredded cheese, or sliced jalapeños, for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Cook the onion and red bell pepper until softened, then add the garlic and cook for 1 minute.
  3. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  4. Stir in the tomato paste and cook for about 1 minute.
  5. Add the diced tomatoes, tomato sauce, beef broth, kidney beans, Worcestershire sauce, chili powder, cumin, smoked paprika, oregano, ground coriander, cayenne pepper, salt, black pepper, and brown sugar if using.
  6. Bring the mixture to a gentle simmer, then reduce the heat to low.
  7. Cook uncovered for 45 to 60 minutes, stirring occasionally, until thickened and flavorful.
  8. Taste and adjust the seasoning as needed.
  9. Garnish with fresh cilantro or parsley and serve with your favorite toppings.

Notes

  • Use ground turkey or chicken for a lighter version.
  • Add black beans or pinto beans for extra texture.
  • Stir in corn during the last few minutes of cooking for added sweetness.
  • Increase the cayenne pepper or add fresh chilies for more heat.
  • Brown the meat first, then transfer everything to a slow cooker for several hours if preferred.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
