Ingredients

  • 8 chicken thighs
  • 3 tbsp olive oil
  • 3 cloves garlic
  • 2 tbsp lime juice
  • 2 tbsp orange juice
  • 1 cup fresh cilantro
  • 1/2 cup fresh parsley
  • 3 green onions, chopped
  • 1 jalapeño, seeded and chopped
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1/4 tsp red pepper flakes

Instructions

  1. Preheat the oven to 425°F.
  2. Pat the chicken thighs dry and season with salt, black pepper, cumin, and red pepper flakes.
  3. Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat.
  4. Place the chicken thighs skin-side down and sear until golden and crispy, about 5 minutes.
  5. Flip the chicken and transfer the skillet to the oven.
  6. Roast for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F.
  7. While the chicken cooks, prepare the salsa verde.
  8. In a food processor or blender, combine the cilantro, parsley, green onions, garlic, jalapeño, lime juice, orange juice, red wine vinegar, honey, and remaining olive oil.
  9. Blend until mostly smooth but still slightly textured.
  10. Taste and adjust seasoning with additional salt and black pepper if needed.
  11. Spoon the citrus-cilantro salsa verde over the chicken thighs before serving.
