Chicken Scallopini is a quick and elegant dish featuring thin, tender chicken cutlets sautéed and served in a bright lemon butter sauce. It’s light, flavorful, and perfect for both weeknight meals and special occasions.

Ingredients

  • Chicken breasts, thinly sliced or pounded
  • Flour (for dredging)
  • Olive oil
  • Butter
  • Garlic, minced
  • Lemon juice
  • Chicken broth
  • White wine (optional)
  • Capers (optional)
  • Salt and pepper
  • Fresh parsley (for garnish)

Instructions

  1. Season the chicken with salt and pepper, then lightly dredge in flour and shake off excess.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Cook the chicken for 3–4 minutes per side until golden and cooked through. Remove and set aside.
  4. In the same pan, sauté garlic briefly until fragrant.
  5. Add lemon juice, chicken broth, and white wine if using, scraping up browned bits.
  6. Simmer the sauce for a few minutes until slightly reduced.
  7. Stir in capers if using.
  8. Return the chicken to the pan and spoon sauce over it.
  9. Garnish with fresh parsley and serve warm.
