Ingredients
2 cups cooked chicken, chopped or shredded 1/2 cup mayonnaise 1 tablespoon Dijon mustard 1 tablespoon lemon juice 1/4 cup celery, finely chopped 1/4 cup red onion, finely chopped
Salt and pepper, to taste 8 slices of bread (white, whole wheat, or any bread of choice) 1/4 cup fresh parsley, chopped (optional)
Instructions
In a large bowl, combine the cooked chicken, mayonnaise, Dijon mustard, and lemon juice. Stir until well mixed.
Add the finely chopped celery, red onion, and parsley (if using). Mix until everything is evenly incorporated.
Season with salt and pepper to taste.
Spread the chicken salad mixture generously on 4 slices of bread.
Top with the remaining slices of bread to form sandwiches.
Slice and serve immediately, or refrigerate for later.
Notes
For a lighter version, swap half of the mayo with Greek yogurt.
Add fruits like grapes, apples, or cranberries for a sweet twist.
If you like spice, add hot sauce or jalapeños to the chicken salad.
