Ingredients

  • 1 1/2 pounds boneless chicken breasts or thighs
  • 2 poblano peppers, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 tortillas
  • 1/4 cup fresh cilantro
  • 1 avocado, sliced
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese

Instructions

  1. Slice the chicken into thin strips.
  2. Cut the poblano peppers, bell peppers, and onion into thin slices.
  3. In a bowl, combine the olive oil, lime juice, chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper.
  4. Toss the chicken with half of the seasoning mixture.
  5. Heat a large skillet over medium-high heat.
  6. Cook the chicken for 5–7 minutes until browned and fully cooked. Remove from the skillet and set aside.
  7. Add the peppers and onion to the skillet with the remaining seasoning mixture.
  8. Sauté the vegetables until tender and slightly charred, about 6–8 minutes.
  9. Return the chicken to the skillet and toss everything together.
  10. Warm the tortillas in a dry skillet or directly over a flame.
  11. Serve the chicken and poblano mixture in warm tortillas with cilantro, avocado, sour cream, and shredded cheese.
