These Chicken Enchilada Sliders are the perfect combination of tender chicken, zesty enchilada sauce, and melted cheese all served on soft slider buns. Ingredients

  1. 1 lb cooked chicken, shredded
    1 can (10 oz) red enchilada sauce
    1 cup shredded cheddar cheese
    1 cup shredded Monterey Jack cheese
    12 slider buns
    1/2 cup diced onions
    1/2 cup diced bell pepper (optional)
    1/2 cup sour cream (for serving)
    1 tablespoon olive oil
    1/2 teaspoon ground cumin
    1/2 teaspoon garlic powder
    Salt and pepper to taste

Instructions

Preheat your oven to 375°F (190°C).

  1. In a large bowl, combine the shredded chicken, enchilada sauce, cumin, garlic powder, salt, and pepper. Stir well to coat the chicken in the sauce and seasonings.
  2. Heat the olive oil in a skillet over medium heat. Add the diced onions and bell pepper (if using) and sauté for 3-5 minutes, until the onions are translucent and soft.
  3. Remove the skillet from the heat and add the sautéed onions and peppers to the chicken mixture. Stir to combine.
  4. Slice the slider buns in half, and place the bottom halves of the buns on a baking sheet lined with parchment paper.
  5. Spoon the chicken mixture evenly onto the bottom halves of the buns, then sprinkle with the shredded cheddar and Monterey Jack cheeses.
  6. Place the top halves of the buns on top of the cheese, gently pressing down to keep them together.
  7. Bake the sliders in the preheated oven for 10-12 minutes, or until the buns are lightly toasted and the cheese is melted.
  8. Remove from the oven and serve hot, with a dollop of sour cream on the side for dipping.
