Chicken and Stuffing Casserole is a comforting classic made with tender chicken, a creamy savory filling, and a buttery herb-seasoned stuffing topping baked until golden brown. It’s an easy family-friendly meal that’s perfect for weeknight dinners, holidays, or meal prep.

Ingredients

  • 3 cups cooked chicken breast, shredded or diced
  • 1 (6 oz) box herb-seasoned stuffing mix
  • 1 1/2 cups chicken broth
  • 4 tbsp unsalted butter, melted
  • 1 can cream of chicken soup
  • 1/2 cup sour cream
  • 4 oz cream cheese, softened
  • 2 celery stalks, diced
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables or frozen peas (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the onion and celery for 4–5 minutes until softened. Add the garlic and cook for 30 seconds.
  3. In a large bowl, combine the cream of chicken soup, sour cream, cream cheese, garlic powder, onion powder, dried thyme, salt, and black pepper until smooth.
  4. Stir in the cooked chicken, sautéed vegetables, and frozen vegetables if using.
  5. Spread the chicken mixture evenly into the prepared baking dish.
  6. In a separate bowl, combine the stuffing mix, melted butter, and chicken broth until lightly moistened.
  7. Spoon the stuffing evenly over the chicken mixture without pressing it down.
  8. Cover with foil and bake for 25 minutes.
  9. Remove the foil and continue baking for 15–20 minutes, or until the stuffing is golden brown and the casserole is hot and bubbly.
  10. Let the casserole rest for 5–10 minutes before serving.
  11. Garnish with fresh parsley if desired.

  • Add broccoli, green beans, mushrooms, spinach, or extra mixed vegetables for more nutrition.
