Chicken and Stuffing Casserole is a warm, comforting baked dish made with tender chicken, creamy sauce, vegetables, and a buttery stuffing topping. It’s an easy family-friendly meal that’s perfect for weeknight dinners, holiday leftovers, or make-ahead meals.

Ingredients

  • Cooked chicken, shredded or diced
  • Stuffing mix
  • Chicken broth
  • Cream of chicken soup
  • Sour cream
  • Frozen mixed vegetables or frozen peas and carrots
  • Celery, diced (optional)
  • Onion, finely diced
  • Butter, melted
  • Garlic powder
  • Onion powder
  • Dried thyme
  • Black pepper
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Prepare the stuffing mix according to the package directions using the chicken broth and butter, or prepare homemade stuffing if preferred.
  3. In a large bowl, combine the cooked chicken, cream of chicken soup, sour cream, mixed vegetables, onion, celery, garlic powder, onion powder, thyme, and black pepper.
  4. Spread the chicken mixture evenly into the prepared baking dish.
  5. Spoon the prepared stuffing evenly over the chicken mixture.
  6. Drizzle any remaining melted butter over the stuffing for extra crispness.
  7. Bake uncovered for 35–40 minutes until the casserole is hot and bubbly and the stuffing is golden brown.
  8. Let the casserole rest for 5–10 minutes before serving.
  9. Garnish with chopped fresh parsley if desired.

  • Rotisserie chicken works well for a quick shortcut.
  • Substitute leftover turkey for the chicken if desired.
  • Add shredded cheddar, mozzarella, or Swiss cheese for a cheesier casserole.
  • Store leftovers in the refrigerator for up to 4 days or freeze for up to 3 months.
  • Reheat with a splash of chicken broth if the casserole seems dry.
