Chicken and Pepperoni Pizza Melts are a quick and satisfying handheld meal made with tender chicken, savory pepperoni, pizza sauce, and melted cheese on crispy bread. They’re perfect for lunch, dinner, or a hearty snack and come together in under 30 minutes.

Ingredients

  • 2 cups cooked shredded or diced chicken
  • 24 slices pepperoni
  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 4 sandwich rolls, hoagie rolls, or 8 slices of thick bread
  • 2 tablespoons butter, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 tablespoon chopped fresh parsley (optional)
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Mix the softened butter with the garlic powder and Italian seasoning.
  3. Spread the garlic butter over the cut sides of the rolls or one side of each bread slice.
  4. Arrange the bread on the baking sheet with the buttered side facing up.
  5. Spread the pizza sauce evenly over each piece of bread.
  6. Layer the cooked chicken over the sauce.
  7. Arrange the pepperoni slices evenly over the chicken.
  8. Sprinkle the mozzarella and Parmesan cheeses on top.
  9. Bake for 10 to 12 minutes, or until the cheese is melted, bubbly, and lightly golden.
  10. Garnish with chopped parsley and crushed red pepper flakes if desired, then serve immediately.

  • Use rotisserie chicken for a quicker meal.
  • Substitute provolone or Monterey Jack cheese for a different flavor.
  • Add mushrooms, bell peppers, onions, or black olives for extra toppings.
  • Use turkey pepperoni for a lighter option.
  • Spread pesto instead of pizza sauce for a fresh twist.
  • Cook in an air fryer at 375°F for 5 to 7 minutes if preferred.

  • Reheat in a 350°F oven or air fryer to keep the bread crisp. Freezing assembled melts is not recommended.
