Soft and chewy oatmeal cookies packed with hearty rolled oats, sweet diced apple, brown sugar, and warm fall spices. These cozy cookies have lightly golden edges and tender centers with apple in every bite.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely diced
  • 1/2 cup chopped walnuts or pecans, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until creamy and slightly fluffy.
  4. Add the egg and vanilla extract and mix until smooth and well combined.
  5. Gradually add the dry ingredients to the butter mixture and mix just until combined.
  6. Stir in the rolled oats until evenly incorporated into the dough.
  7. Gently fold in the finely diced apple and the chopped walnuts or pecans, if using.
  8. Scoop rounded portions of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  9. Bake for 11–13 minutes, until the edges are lightly golden and the centers still look slightly soft.
  10. Let the cookies rest on the baking sheets for about 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • Firm apples such as Granny Smith, Honeycrisp, or Fuji work well because they hold their shape during baking.
  • Pat particularly juicy diced apples dry before adding them to the dough to prevent excess moisture.
  • Add raisins for extra sweetness and a chewier texture.
  • Toast walnuts or pecans before adding them for deeper nutty flavor and extra crunch.
  • Ground ginger, cloves, allspice, or apple pie spice can be added for a stronger fall spice flavor.
  • Drizzle cooled cookies with vanilla, maple, or caramel glaze for a sweeter finish.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze baked cookies for up to 2 months or freeze individual portions of dough and bake from frozen, adding a couple of minutes to the baking time.
  • Prepared dough can be refrigerated for up to 24 hours.
  • Microwave a cookie for 5–10 seconds before serving for a warm, freshly baked texture.
