Cheesy Taco Spaghetti is a hearty one-pan meal that combines tender spaghetti, seasoned ground beef, zesty tomatoes, and plenty of melted cheese. This comforting fusion dish delivers taco-inspired flavors in a creamy, family-friendly pasta dinner.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 can (15 ounces) tomato sauce
  • 3 cups beef broth
  • 8 ounces spaghetti, broken in half
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Chopped fresh cilantro or green onions for garnish

Instructions

  1. Heat a large skillet or Dutch oven over medium heat.
  2. Cook the ground beef and diced onion until the beef is browned and the onion is tender.
  3. Drain excess grease and add the garlic, cooking for 30 seconds.
  4. Stir in the taco seasoning, diced tomatoes with green chilies, tomato sauce, beef broth, salt, and black pepper.
  5. Bring the mixture to a gentle boil.
  6. Add the broken spaghetti and stir well to ensure the pasta is submerged.
  7. Reduce the heat to medium-low, cover, and simmer for 12 to 15 minutes, stirring occasionally, until the spaghetti is tender.
  8. Remove the skillet from the heat and stir in half of the cheddar and Monterey Jack cheese until melted.
  9. Sprinkle the remaining cheese evenly over the top.
  10. Cover the skillet for 2 to 3 minutes until the cheese is melted and gooey.
  11. Garnish with cilantro or green onions before serving.
