Cheesy Spinach Chicken Bake is a rich and comforting dinner featuring tender chicken breasts topped with a creamy spinach mixture and plenty of melted cheese. This protein-packed casserole is easy to prepare and perfect for weeknight meals or meal prep.

Ingredients

  • Boneless skinless chicken breasts
  • Fresh spinach, chopped
  • Cream cheese, softened
  • Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • Garlic, minced
  • Olive oil
  • Italian seasoning
  • Salt
  • Black pepper
  • Onion powder
  • Red pepper flakes (optional)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil.
  3. Arrange the chicken breasts in a single layer in the prepared dish.
  4. Season the chicken with Italian seasoning, onion powder, salt, and black pepper.
  5. In a mixing bowl, combine the cream cheese, spinach, garlic, half of the mozzarella cheese, and half of the Parmesan cheese.
  6. Mix until well combined.
  7. Spread the spinach mixture evenly over the chicken breasts.
  8. Sprinkle the remaining mozzarella and Parmesan cheese on top.
  9. Add red pepper flakes if desired.
  10. Bake for 30 to 35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  11. Broil for 2 to 3 minutes for a golden cheese topping if desired.
  12. Remove from the oven and let rest for 5 minutes.
  13. Garnish with fresh parsley before serving.
