Ingredients
2 lbs potatoes, peeled and sliced or diced
2 tbsp butter
1 small onion, diced
2 cloves garlic, minced
2 cups milk or heavy cream
2 cups shredded cheddar cheese
1 tsp salt
1/2 tsp black pepper
1/2 cup sour cream (optional)
1/4 cup cooked bacon bits (optional)
2 tbsp green onions, chopped (optional)
Instructions
Preheat oven to 375°F (190°C) and grease a baking dish.
Melt butter in a skillet over medium heat. Add onion and cook until softened, then add garlic and cook briefly.
Pour in milk or cream and heat gently. Stir in half of the cheese until melted and smooth. Season with salt and pepper.
Layer potatoes in the baking dish and pour cheese sauce evenly over them.
Cover with foil and bake for 30 minutes.
Remove foil, sprinkle remaining cheese on top, and bake uncovered for 15–20 minutes until tender and bubbly.
Let cool slightly and garnish with green onions or bacon bits if desired before serving.

Use Yukon Gold or russet potatoes for best texture.
