Cheesy Cuban Chicken Rice Bake is a hearty, one-dish casserole featuring tender chicken, seasoned rice, and melty cheese with bold Cuban-inspired flavors. It’s a comforting and satisfying meal perfect for family dinners.

Ingredients

  • chicken breast or thighs
  • long grain rice
  • chicken broth
  • olive oil
  • garlic
  • onion
  • bell peppers
  • tomato sauce
  • cumin
  • paprika
  • oregano
  • salt
  • black pepper
  • cheddar or mozzarella cheese
  • fresh cilantro

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Sauté onion, garlic, and bell peppers in olive oil in an oven-safe dish until softened.
  3. Stir in rice, tomato sauce, chicken broth, cumin, paprika, oregano, salt, and pepper.
  4. Place seasoned chicken on top of the rice mixture.
  5. Cover tightly with foil and bake for 35–40 minutes until rice is tender and chicken is cooked through.
  6. Remove foil and sprinkle cheese over the top.
  7. Bake uncovered for 10–15 minutes until cheese is melted and bubbly.
  8. Let rest for a few minutes before serving.
  9. Garnish with fresh cilantro.
  10. Serve warm.
