Thick roasted cauliflower steaks with golden edges, topped with melted cheese for a rich, flavorful, and satisfying vegetarian dish.

Ingredients

  • Large head of cauliflower
  • Olive oil
  • Garlic
  • Paprika
  • Salt
  • Black pepper
  • Shredded cheese (such as mozzarella, cheddar, or a blend)
  • Parmesan cheese
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Remove leaves from the cauliflower and trim the stem slightly while keeping the core intact. Slice into 1-inch thick steaks.
  3. Place the cauliflower steaks on the baking sheet and brush both sides with olive oil.
  4. Sprinkle with minced garlic, paprika, salt, and black pepper.
  5. Roast for 20–25 minutes, flipping halfway through, until tender and lightly golden.
  6. Remove from the oven and top each steak with shredded cheese and Parmesan.
  7. Return to the oven and bake for 5–10 minutes until the cheese is melted and bubbly.
  8. Garnish with fresh parsley if desired and serve warm.

Notes

  • Keep the core intact to prevent the steaks from falling apart.
  • Do not overcrowd the pan to ensure proper roasting.
  • Add chili flakes or hot sauce for extra heat.
  • Use different cheeses like gouda or provolone for variation.
