This Cheesecake Factory Brown Bread Copycat recreates the restaurant favorite with a soft, tender crumb, a hint of sweetness, and a rich molasses flavor. Topped with oats and baked until golden, it’s perfect served warm with butter alongside soups, salads, or your favorite meals.

Ingredients

  • 1 1/4 cups warm water
  • 2 1/4 teaspoons active dry yeast
  • 2 tablespoons honey
  • 2 tablespoons molasses
  • 2 tablespoons unsalted butter, softened
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups bread flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon salt
  • 2 tablespoons old-fashioned oats, for topping
  • 1 tablespoon melted butter, for brushing (optional)

Instructions

  1. Combine the warm water, active dry yeast, and honey in a large mixing bowl. Let stand for 5–10 minutes until foamy.
  2. Stir in the molasses and softened butter until well combined.
  3. In a separate bowl, whisk together the whole wheat flour, bread flour, cocoa powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  5. Knead the dough for 8–10 minutes until smooth and elastic.
  6. Place the dough in a lightly greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.
  7. Divide the dough into 8 equal portions and shape each into an oval loaf.
  8. Place the loaves on a parchment-lined baking sheet, cover loosely, and let rise for 30–45 minutes.
  9. Brush the tops lightly with water and sprinkle evenly with old-fashioned oats.
  10. Bake in a preheated 350°F (175°C) oven for 20–25 minutes, or until the loaves sound hollow when tapped on the bottom.
  11. Brush with melted butter if desired and allow to cool slightly before serving.

Notes

  • Substitute part of the whole wheat flour with rye flour for a heartier flavor.
  • Add 1 tablespoon of ground flaxseed for extra nutrition.
  • Replace the honey with maple syrup for a different sweetness.
  • Shape the dough into dinner rolls and reduce the baking time to 15–18 minutes.
  • Store at room temperature for up to 3 days or freeze for up to 3 months. Reheat in a 325°F oven for 5–8 minutes before serving.
