Ingredients

  • 1 pound baby bell peppers, halved and seeded
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 8 ounces burrata cheese
  • 1 tablespoon balsamic glaze
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon fresh thyme leaves (optional)
  • Crushed red pepper flakes (optional)
  • Toasted crusty bread or crostini, for serving

Instructions

  1. Preheat a grill pan, cast-iron skillet, or outdoor grill over medium-high heat.
  2. Toss the baby bell peppers with the olive oil, garlic, salt, and black pepper until evenly coated.
  3. Cook the peppers for 6–8 minutes, turning occasionally, until tender and lightly charred on all sides.
  4. Transfer the warm peppers to a serving platter.
  5. Place the burrata in the center of the platter, allowing it to soften slightly from the warmth of the peppers.
  6. Drizzle the peppers and burrata with balsamic glaze.
  7. Sprinkle with chopped basil, fresh thyme if using, and crushed red pepper flakes if desired.
  8. Serve immediately with toasted crusty bread or crostini.
