Carrot Cupcakes are moist, tender cupcakes filled with freshly grated carrots and warm spices, then topped with a rich cream cheese frosting. They’re a classic homemade dessert perfect for holidays, celebrations, or everyday treats.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon

  • 1/4 tsp ground ginger
  • 1/2 cup granulated sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a medium bowl.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Fold in the grated carrots and any optional nuts or raisins.
  6. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  7. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool completely on a wire rack.
  9. For the frosting, beat the cream cheese and butter together until smooth and creamy.
  10. Gradually add the powdered sugar and continue beating until fluffy.
  11. Mix in the vanilla extract and salt.
  12. Pipe or spread the frosting onto the cooled cupcakes.
