Caramelized Red Onion Chutney

A rich, sticky red onion chutney with brown sugar, balsamic vinegar, garlic, and herbs. Sweet, tangy, and deeply savory, it pairs beautifully with cheese boards, burgers, sandwiches, roasted vegetables, and savory tarts.

Ingredients

  • Red onions, thinly sliced
  • Olive oil
  • Brown sugar
  • Balsamic vinegar
  • Red wine vinegar
  • Garlic, minced
  • Fresh thyme
  • Salt
  • Freshly ground black pepper
  • Bay leaf, optional

Instructions

  1. Peel the red onions, cut them in half, and slice them thinly and evenly.
  2. Heat the olive oil in a large, heavy-bottomed skillet or saucepan over medium-low heat.
  3. Add the sliced onions and a pinch of salt. Cook for 15–20 minutes, stirring occasionally, until very soft.
  4. Add the minced garlic and cook for about 1 minute, until fragrant.
  5. Stir in the brown sugar and cook for a few minutes, until the sugar begins to dissolve and coat the onions.
  6. Pour in the balsamic vinegar and red wine vinegar. Add the fresh thyme, black pepper, and bay leaf if using.
  7. Reduce the heat to low and simmer gently for 30–40 minutes, stirring regularly and more frequently as the mixture thickens.
  8. Continue cooking until most of the liquid has reduced and the onions are dark, glossy, soft, and jam-like.
  9. Remove the bay leaf and taste the chutney. Adjust the salt, sugar, or vinegar as desired.
  10. Remove from the heat and allow the chutney to cool. It will thicken further as it reaches room temperature.
  11. Transfer the cooled chutney to a clean airtight container or jar and refrigerate until ready to serve.

Notes

  • For a spicy chutney, add crushed red pepper flakes, cayenne pepper, or finely chopped fresh chili.
  • Finely diced apple or pear can be cooked with the onions for a fruitier variation.
  • A small pinch of cinnamon, cloves, or ginger can be added for warm spiced flavor.
  • Part of the brown sugar can be replaced with maple syrup or honey for a different sweetness.
  • If the chutney is too runny, continue simmering it uncovered over low heat until the excess moisture evaporates.
  • Serve chilled, at room temperature, or gently warmed.
  • Store in a clean airtight container in the refrigerator and use within 1–2 weeks. Always use a clean spoon and discard the chutney if there are signs of spoilage.
  • This is a refrigerator chutney and should not be treated as shelf-stable unless prepared using a separately tested canning recipe and proper preservation method.
