Ingredients

  • 12 ounces spaghetti, linguine, or fettuccine

  • 3 large yellow onions, thinly sliced
  • 3 tablespoons olive oil

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves
  • 2 to 3 tablespoons crunchy chili onion oil
  • Additional Parmesan cheese, for serving
  • Fresh parsley, chopped, for serving

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente.
  2. Reserve 1/2 cup of pasta water before draining the pasta.
  3. While the pasta cooks, heat the olive oil and butter in a large skillet over medium heat.
  4. Add the sliced onions, salt, and black pepper.
  5. Cook the onions slowly for 25 to 30 minutes, stirring occasionally, until deeply golden and caramelized.
  6. Add the garlic and cook for 30 seconds until fragrant.
  7. Stir in the balsamic vinegar and thyme.
  8. Add the drained pasta to the skillet with the onions.
  9. Pour in the reserved pasta water and toss to combine.
  10. Add the Parmesan cheese and continue tossing until a light sauce forms.
  11. Divide the pasta among serving bowls.
  12. Top with crunchy chili onion oil, additional Parmesan cheese, and fresh parsley.
  13. Serve immediately.
