This Caramelized Onion Hummus is a creamy, savory twist on classic hummus with the rich sweetness of slow-cooked onions. It’s perfect as a dip, spread, or appetizer for any occasion.

Ingredients

  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 2 cups cooked or canned chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 2 garlic cloves
  • 2 tablespoons extra virgin olive oil
  • 24 tablespoons cold water
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (optional, for garnish)
  • Olive oil, for drizzling (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-low heat.
  2. Add the sliced onions and cook slowly, stirring occasionally, for 30 to 40 minutes until deeply golden, soft, and caramelized.
  3. Allow the onions to cool slightly.
  4. Add the chickpeas, tahini, lemon juice, garlic, extra virgin olive oil, cumin, salt, pepper, and half of the caramelized onions to a food processor.
  5. Blend until smooth, adding cold water one tablespoon at a time until the desired consistency is reached.
  6. Taste and adjust the seasoning as needed.
  7. Spoon the hummus into a serving bowl and top with the remaining caramelized onions.
  8. Drizzle with olive oil and garnish with chopped parsley if desired.
  9. Serve with pita bread, crackers, or fresh vegetables.
